They say that “Autumn carries more gold in one pocket than all of the other seasons.” I can sure feel Autumn here in the West, the mornings are so lovely with just a little touch of briskness, bright blue skies and the mountains are just starting to think about putting on a new Fall coat. Oh yes, I love Autumn. One of my favorite memories is that of laying in bed on an early Fall mornings with the smells of cinnamon, nutmeg, and cloves coming from the kitchen. I knew Mom was making something yummy and hardy. Those spices give a lovely heady smell, that brings me back to milder, slower Autumn days when I was a child. Lazily walking to the bus stop to go to school. Fond memories that I cherish.
I would love to share with you one of my favorite Autumn time recipes that will give you all of those beautiful aromatic smells and flavors. Maybe your family will hurry a little faster to get ready for the day when they get a whiff of what you are baking.
1 1/2 water
1 cup rolled oats
1 cup brown sugar
1 cup sugar
2 eggs, well beaten
1 cup flour
1/2 cup whole wheat flour ( if you don’t want to use whole wheat flour just add 1 1/2 cups flour)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
Combine: shortening, sugars, eggs and whip until fluffy. Add the rest of the ingredients mix well.
Pour in to a 13x9x2 inch baking pan. Bake at 350 degrees F. for 35 to 40 minutes or until cake tests done.
Enjoy with a dab of whipped cream, fresh poured cream,or plain, or you can use this topping
1/2 cup butter
1 cup brown sugar
1/3 cup evaporated milk
1 cup coconut
1 cup chopped nuts
1 teaspoon vanilla
Mix butter and add sugar. Blend. Add remaining ingredients and spread on baked hot cake. Place under broiler for a minute or to if desired.
Oh yes! YUM YUM!
